Recipe: Summer Cocktail – Lemon Creamtinis

Fortunately for me, my mother-in-law is no Marie Barone. If you have ever watched Everyone Loves Raymond, the American sitcom, you know that Ray’s mother is a great cook and a jealous guardian of her recipes. We all know a Marie Barone, right?

My mother-in-law has a recipe box stuffed with handwritten recipes on scraps of paper and index cards. She will occasionally pull one out to show me, and sometimes we make one of the recipes. Since it is June, and finally hot in Rhode Island, we thought it would be fun to make a frozen summer cocktail from the box. This was the choice for today.

This drink is frosty and refreshing, and totally worth the brain freeze.

Lemon Creamtini

Lemon Creamtini

Lemon Creamtinis (makes about one blender full, or 6-8 drinks)


6 ounces of frozen lemonade mix (located near the frozen orange juice at the grocery store; usually in 12 oz cans)

6 ounces of gin

3 ounces of heavy cream

3 ounces of milk

3 tablespoons confectioner’s sugar

1 egg

Ice (between 1-3 cups)


Put ingredients in blender. Add a cup of ice. Blend. Add more ice until the mixture is the consistency of a slushy margarita. Pour into glasses and serve.

Caution: this cocktail is deceptively and dangerously delicious, so I recommend serving it in small portions. I used a set of old fashioned champagne glasses that my mother-in-law gave us years ago, and they were perfect.
